As promised, I compiled a list of my top 10 favorite recipes from Bluegrass Bites’ first year in celebration of our first blog birthday over the weekend! These are, in my opinion and in no particular order, the tastiest of all the tasty recipes to come out of the BB kitchen over the past 12 months.

Toasted Coconut Ice Cream: This ice might look a little plain Jane, but it’s anything but! Incredibly rich and packed with three sources of coconut flavor, this ice cream will knock your socks off! It pairs perfectly with fruit, chocolate, and long walks on the beach.
Slow Cooker Carolina Pulled Chicken BBQ: Food from my home state! This smoky, vinegar-based bbq has a little spicy kick that will keep you coming back for more! You will not believe that this bbq came out of your slow cooker. Fast, easy, and such a crowd-pleaser!
Carrot Cake Pancakes: Veggies for breakfast in the best possible way! These sweet, carrot-speckled pancakes are garnished with a rich cream cheese topping, brown sugar pecans, and toasted coconut. One of my favorite brunch recipes ever ever ever!
Beef Daube Provençal: A classic French braised beef & vegetable stew flavored with red wine, crushed garlic, and herbs. Simple to make and so comforting! Basically what my Sunday dinner dreams are made of.
Asian Salmon with Rice Noodles: This meal has shown up on our dinner rotation several times a month for the past 2 years, it’s that good! Caramelized salmon is bursting with Asian flavors thanks to a simple yet flavorful marinade. Serve with rice noodles and steamed broccoli for a complete meal!
Squash Marinara: A simple homemade marinara loaded with squash makes for an easy, healthy pasta sauce!
Tomatillo Pork Stew: One of the best things I’ve eaten in months, at home or at a restaurant. I love this recipe! Flavorful, filling, and tangy, this pork, tomatillo, and potato-packed stew is one that you won’t soon forget! Perfect for serving to company or cuddling up with over the weekend.
Piña Colada Smoothie: My favorite sippable breakfast or afternoon pick-me-up! Toasted coconut Greek yogurt and vanilla almond milk are blended with frozen pineapple and banana chunks to make one thick, velvety, protein-packed smoothie. How I’d love to enjoy one of these while sitting on the beach!
BBQ Salmon Tacos with Chipotle Lime Crema: BBQ rubbed salmon topped with a chipotle lime crema, salty Cotija cheese, crunchy cabbage, cilantro, and a squeeze of lime all wrapped in corn tortillas. These babies will kick your Taco Tuesday game up to a completely different level!
Slow Cooker Chicken Noodle Soup: You guys, this chicken noodle soup is ridiculous! Absolutely packed with flavor thanks to a few kitchen tips and tricks, yet comes together in a flash using your slow cooker – what could be better than that?!
