Happy Thursday, friends! I don’t know about you all, but I am pretty excited to be almost through with another week. I’m currently counting down the days until all things spring arrive (spring break, daylight saving time, and the first official day of spring, to name a few), so I don’t really mind having the days fly by at the moment.
One thing that really made my week was getting to finally purchase some Girl Scout cookies last night. Our local Girl Scout cookie pick-ups were a little delayed because of all of the snow that we got last week, and I was super excited to finally see a troop right inside Kroger’s entrance last night. I got there just in time, too, because the Tagalongs were almost gone! How disappointing that would have been! Luckily I was able to snag one box each of Tagalongs, Samoas, and Thin Mints (for Landon…no mint/chocolate combos for this girl); I paid the Girl Scouts in cash and merrily went on my way. The paying in cash part was due to a recommendation from my friend, Stevie, who used to lead a troop. Paying in cash gives the girls an opportunity to count out money and make proper change on their own, which is a more valuable lesson than learning to swipe a credit card, in my opinion. Just a little food for thought.
Onto today’s recipe – I whipped up some Apple Pie Smoothies for you all, which make for a delicious breakfast on the go, and yet are also a great dessert option for those of you trying to pull back from the less healthy treats out there (like all of the cookies I just talked about). I was so excited to find Jonagold apples at my grocery store last week (they’re one of my favorite types), and they turned out to be perfect for this recipe. Feel free to use your favorite type of apples and whatever milk you have on hand! I’m always up for new weekday breakfast ideas, especially ones that are as portable, yummy, and filling as these are. - 2 large red apples (I used Jonagold), cored and sliced
- 1 frozen banana
- 1 cup ice
- 1 cup skim milk (or whatever type of milk you prefer)
- ½ cup Greek yogurt (I used Vanilla Chobani Simply 100)
- 1 teaspoon ground cinnamon
- pinch of freshly ground nutmeg
- pinch of ground ginger
- tiny pinch of ground cloves
- 1-2 teaspoons honey
- Add all ingredients to a blender. Pulse until combined and smooth. Taste and adjust sweetness using honey as desired, pulsing to combine after additions.
- Serve immediately.
