Hi there, friends! So sorry for the silence lately! Many of my summer adventures have been coming to a close over the past week, and I’ve needed to focus all of my attention on making sure that everything that needed to be wrapped up was indeed.
I wanted to share a bit about what Summer 2015 looked like in my house. Way back in April, I was offered a summer position related to my day job as a graduate student studying epidemiology. The position was in New Jersey, about 11.5 hours away from our home in Louisville, and I was pretty torn in my decision regarding whether to take the internship.
The offer ended up being too good to pass up for many reasons, so Landon, Linus, Truman, and I packed up the belongings that we couldn’t live without for 11 weeks and headed northeast back in May.
Between work, an online class, posts/recipe development for the site, and weekend escapades, this has been one busy, but extremely rewarding summer.
Our summer weekend trips included sightseeing in New Jersey (Clinton, Westfield, Princeton, Jersey City, and Hoboken were favorites), Pennsylvania (Bethlehem/ Lehigh Valley, New Hope, a few Delaware River towns, and Philadelphia), and three weekend trips to NYC (read about my favorite of the three here).
We just returned back home to the Bluegrass State on Saturday. Though the summer was full of great adventures and the most wonderful work experience, returning home has never felt so sweet.
