Rain, rain go away. This has seriously been the rainiest summer ever! Thankfully, we’ve been getting the worst weather during the week, leaving rays of sunshine between summer storms on the weekends. I’ll gladly take what I can get, as I’m reminded more and more with each passing day that the summer days are quickly slipping away.
Well, if you can’t get outside to enjoy the summer, I have a tasty treat that will whisk away your rainy day blues. Friends, meet the Piña Colada Milkshake – a sinfully delicious blend of coconut and pineapple in milkshake form. I heart this treat big time.
I used fresh pineapple pieces in my milkshake and then bought some pineapple juice separately so that I could enjoy huge slices of fresh pineapple on the side. As for the ice cream, if you’re not up for making your own (using this super duper yummy recipe), then I would recommend using Talenti’s Caribbean Coconut gelato. It’s pretty awesome. Adding a little bit of cream of coconut really seals the deal. I almost felt like I was back on the beach in Saint Lucia while sipping this shake. It’s really that legit. You can totally booze it up if you wish. I thought about it and then decided that there were already quite a few boozy recipes on the blog (mostly bourbon). It’s just as tasty sans alcohol, though!

- 2 cups coconut ice cream (homemade or store bought)
- ¼ cup cream of coconut (I used Goya)
- ¼ cup pineapple juice
- ¼ cup diced pineapple
- Whipped cream and pineapple slices for topping, if desired
- Mix ice cream, cream of coconut, pineapple juice, and diced pineapple together in a blender (or in a mixing bowl with a rubber spatula) until combined. Pour into glasses, top with whipped cream and pineapple slices (if desired), and serve immediately. Enjoy!
